I know I talk a big fashion game here but some of you may know that I have a huge sweet tooth (if you follow me on Instagram, than you definitely already know). Like you, I get addicted to everything pumpkin every single October. So my gift to you this fall? This highly- addictive muffin recipe:
This fall, like every fall, I jump right on the pumpkin bandwagon and try and consume as much of this wonderful flavour as possible. Lattes, pies, cookies, you name it. I even have a Pinterest board called, “Pumpkin Everything”, dedicated to all the recipes I can’t wait to try. So today, I’m giving it a shot. I’m giving my first attempt at a mouth-watering recipe. I pretty much took my favourite three flavours and created an absolutely delicious recipe: pumpkin, coconut, white chocolate muffins.
We eat a lot of muffins at my house, their great for breakfasts and snacks. Since I have a few picky eaters in my house, I try and pack some nutrients in wherever I can. Pumpkin is full of fibre, vitamin A and C and potassium. Coconut oil is high in natural saturated fats which increase the healthy cholesterol. And white chocolate? Well that’s just good for the soul. So make these for breakfast with your coffee or dessert with your wine. You’re welcome.
Pumpkin Coconut White Chocolate Muffins
1 1/4 cups all-purpose flour,
1/2 cup whole wheat flour,
1/2 cup brown sugar packed,
1/3 cup shredded coconut flakes,
2 tsp pumpkin pie spice
1 1/2 baking powder
1 tsp baking soda
1/4 tsp salt
1 1/2 cups canned pure pumpkin
1/2 cup vanilla yogurt
1/3 cup coconut oil
1/2 cup white chocolate chips
Now because it’s called a “muffin” and not a “cake”, go ahead and eat two.
